Wie einfach sich dieser Fr\u00fchlingsklassiker in einen wohlschmeckenden Hauptgang integrieren l\u00e4sst, welch gute Figur er dabei macht und was man bei der Zubereitung beachten muss, verraten wir euch heute.&nbsp;<\/p>\n\n\n\n<p>Bevor wir uns dem Rezept widmen, m\u00f6chten wir eine kleine Lobeshymne diesem einzigartigen Staudengew\u00e4chs widmen. Rhabarber ist nicht nur eine Vitamin C-Bombe, sondern enth\u00e4lt auch viele Mineralstoffe wie Phosphor und Kalium und verw\u00f6hnt den Darm mit Ballaststoffen. Denn es sind nur wenige Punkte, auf die man bei Genuss von Rhabarber beachten muss. Rhabarber enth\u00e4lt Oxals\u00e4ure: Je gr\u00fcner das Fruchtfleisch und die Schale sind, desto h\u00f6her ist der Anteil dieser Kalzium-raubenden S\u00e4ure. Roh sollten Rhabarberstangen daher nur in kleinen Mengen verzehr werden und vom Konsum der Rhabarberbl\u00e4tter wird g\u00e4nzlich abgeraten. Am bek\u00f6mmlichsten (und leckersten) gelingt der Rhabarber, wenn die Stangen gesch\u00e4lt und anschliessend entweder blanchiert oder gekocht werden.<\/p>\n\n\n\n<p>Offiziell endet die Rhabarbersaison am 24. Juni. Somit steht uns nur noch ein knapper Monat f\u00fcr den Rhabarbergenuss zur Verf\u00fcgung. Lasst uns keine Zeit verlieren und die Rhabarberst\u00e4ngel \u00e4hm Kochl\u00f6ffel sofort schwingen! Zu essen gibt es einen lauwarmen Salat aus gr\u00fcnen Spargeln mit Rhabarber-Relish, pochiertem Ei und der cremigsten Polenta \u00fcberhaupt.&nbsp;<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure
